If you select this you will see all the folders for that account, including the Inbox. This is clearly not logging out, this is deleting the account from the iPad and you won't be able to log back in without setting up the account. You are now signed out of your email account and you will have to log back in the next time you want to use email on the iPad. There may be an All Inbox choice if you have more than one account.
